Quick & easy mini doughnuts

Last year I set about recreating these little fried snacks called 'oily cakes' inspired by the film First Cow with MUBI. Honestly - they were DELICIOUS and i've made them a lot since, they are basically quick and easy doughnuts.

What I love about this recipe is that you can make them in minutes, really good for last minute dessert cravings, especially if you just happen to have a deep fat fryer on the go...

I like to finish these with a drizzle of honey and a grating of cinnamon. You can however roll them in sugar if you prefer and serve them with a dipping sauce of your choice.

Makes 8-10


120g plain flour

1 tsp baking powder

pinch of salt

1 tbsp caster sugar

50g melted unsalted butter

1 egg (50g)

100ml whole milk


Cinnamon stick

Honey


500ml vegetable oil for frying


  • In a large mixing bowl, stir together the flour, baking powder, salt, sugar

  • Add in the egg, milk and melted butter. Using a whisk stir well to form a batter

  • Cover with a tea towel and let the batter sit at room temperature for 20 mins

  • In a large shallow pan heat the oil gently to 160 degrees C

  • Drop in tablespoons of batter, gently turning them so they don't stick to the bottom of the pan. Fry 3-4 at a time, do not overcrowd the pan

  • Cook for 4-6 minutes, each, until they look golden all over

  • Remove from the oil and drain on parchment paper, allow to cool for 5 minutes

  • Grate over a fresh cinnamon stick and drizzle over honey
